| These red grapes are harvested early and crushed and destemmed, pressed and fermented like a white grape variety. This is to have minimal skin contact, extracting less colour and tannin. The wine is then fermented at about 14 degrees, fermented for about 2 weeks until semi dry and bottled under screwcap to retain freshness. All vines have been spur pruned. Vine age is varied. Vines are planted roughly 1.8m apart with 3.6m between the rows to allow machinery access. The trellis system is generally a single wire cordon.
